Dr. Min' major research objective is to improve the oxidative and flavor stability of foods by understanding and controlling the chemical mechanisms for the flavor compound formation by a combination of GC, HPLC, IR, NMR, ESR and MS . Dr. Min's group painstakingly, conclusively and scientifically developed the noble chemical mechanisms for the formation of sunlight flavor in dairy products, reversion flavor in soybean oil, and light sensitivity of riboflavin. Professor Min is the pioneer for the formation, reaction mechanisms and kinetics, quenching mechanisms and kinetics of singlet oxygen in foods. Dr. Min has published 7books and more than 200 publications.

Professor Min has been Scientific Editor, Journal of Food Science, and Journal of American Oil Chemists' Society. and on the editorial board of Critical Reviews on Food Science and Nutrition, Journal of Food Quality, Food Chemistry, Brazilian Journal of Food Science, Food Science and Biochemistry, and Marcel Dekker Publications.

Dr. Min received more than 35 national and international awards including 1995 IFT Achievement Award of Lipid and Flavor Chemistry, 2001 IFT Food Chemistry Lectureship Award, 2005 IFT Harold Macy Food Science & Technology Award, 2006 Japanese Oil Chemists' Society Research Award and 2007 American Oil Chemists' Sociey Bailey Award. He also received 1999 Distinguished Senior Faculty Research Award, 2002 Professor of the Year Award, 2004 Outstanding Pomerance Teaching Award, and 2007 The Ohio State University Gamma Sigma Delta Teaching Award. He has been an elected member of Korean National Academy of Science, and Fellow of Institute of Food Technologists, American Oil Chemists' Society, American Institute of Chemsits, and International Academy of Food Science and Technology.
