Dairy Foods Research and Extension

Dr. Alvarez's primary responsibilities are conducting extension work and research to support the dairy industry in Ohio. His extension work includes implementing training courses in dairy processing and technology, GMPs, HACCP programs for plant management personnel and conducting environmental and Grade "A" dairy plant audits. Research areas are in dairy processing and new product development. Current research projects are in quality and shelf life of PET-bottled ultrapasteurized milk, use of sodium acid sulfate in direct acidification of milk and processing factors affecting physico-chemical properties of Swiss cheese. Professor Alvarez advises graduate students and teaches FST 610 Processing of Fluid Milk and Dairy Products, and FST 210 Evaluation of Dairy Products.
