"Stubby" Parker Endowed Chair in Dairy Foods:

The J. T. Parker Chair In Dairy Foods was established through a $1.5 million endowment given by the dairy industry of Ohio to support the research mission of the Parker Chair. Professor Harper was appointed to the Chair on October 1, 1993 for a five year term, and reappointed in 1998 for another 4 years. The research program of the chair places emphasis on the functional properties of dairy foods, including flavor. Special emphasis is being placed on physiologically functional foods. The broad objective is to provide research information that will provide the basis for expanding market opportunities for value added dairy foods.
